Steamed Mocha Cupcakes Ingredients:
2 cups self rising flour
1 cup white sugar
3 teaspoons cocoa powder
1 teaspoon instant coffee powder
1/2 teaspoon baking powder
1 can evaporated milk
1/4 cup vegetable oil
1 small egg, beaten
12 pieces of cupcake molds
Yield: 12 pieces of cupcakes
How To Make Steamed Cupcakes:
1. In a mixing bowl, sift the flour, sugar, cocoa powder, coffee powder, and baking powder. Mix well.
2. Add the vegetable oil, evaporated milk, and beaten egg. Mix well until smooth. Set aside.
3. Lightly brush each cupcake mold with butter or vegetable oil.
4. Pour the cupcake mixture into each mold until it is 75% full.
5. In a steamer with boiling water, steam the cupcakes for 12 minutes.
6. Remove cupcakes from steamer and allow to cool.
7. Remove steamed mocha cupcakes from molds before serving.
Serve steamed mocha cupcakes with hot or cold milk.
